Crumble Crust
Ingredients: 1 3/4 cup all purpose flour 1/3 white granulated sugar 1/4 cup light brown sugar 1/4 tsp salt 1 tsp baking powder 1 large egg 1/2 cup canola oil 2tsp vanilla essence/ caramel essence
Caramel Apple
Ingredients: 3-4 apples (peeled&sliced into small blocks) 3 Tbs (45ml) brown sugar lemon juice from 1/2 lemon 1 tsp cinnamon 1/4 tsp nutmeg 2 Tbs butter
Directions: Preheat oven to 180° C To prepare crust. Combine all dry ingredients and set a side. Combine egg, oil and essence and lightly whisk. Add to dry ingredients and thoroughly mix. Cover and set aside.
To make the filling. Melt butter in a pan. Add the apples with sugar and spices. Cook in low heat for 5-10 min until the mixture is thickened a bit and a brown caramel colour. Set aside.
Use 3/4 of the dough to cover greased small tart pans/one large tart pan. Spoon equal amounts of filling and crumble rest of dough over each tart. Bake for 30-40 min till the pastry is lightly browned.
Serve with a scoop of ice-cream/whipped cream. Tastes best when still warm.
Yield: 6-8 small tarts/ 1 large tart
